Commissary Kitchen in Eastern L.I.??

hello all I'm about to open up a Hot dog truck and I'm in need of a Commissary Kitchen? I'm going to be located in the Ronkonkoma area. I really don't need the use of one but the town requires a letter from me stating I have one. I have a fridge and freezer on the truck so everything will be done right on the truck. Any help would be great. I have called the local places around me and no one wants to deal with the health dept anymore then they have too.

Have you tried the Knights of Columbus, or VFW Hall? Or a local church? They're usually open to making a couple of extra bucks.
