Fresh ricotta

PIcked up a pound of fresh ricotta today, and now trying to think of the best way to use it. I often do swiss chard, garlic and pasta with the ricotta as a kind of open ravioli, but looking for new ideas. Thanks for the suggestions.

      -Boil and then and saute in garlic and oil broccoli rabe, or any bitterish green. Salt and crushed red pepper. Top room temp greens with ricotta, smear on fresh whole wheat country bread.
      -Dollop in a fresh tomato sauce w basil on penne or ziti.
      -Mix ricotta, much grated pecorino, lots of freshly cracked black pepper in a bowl. Cook any pasta to taste. Drain, reserve some pasta water, mix pasta water w ricotta and enough pasta water to make creamy. Small cubes of soppressata, cooked fresh sausage, or any hard salami option.

        Ricotta doughnuts. Google, there's lots of recipes. Beautiful! Keep your oil not too hot. Roll them in sugar and/or make a dark chocolate ganache to dip them in. Plus coffee or liqueurs. Or and :)

          White pizza: spoonfuls of ricotta, olive oil, romano, slivers of roasted garlic, spinach, broccoli rabe or broccoli, mozzarella, fresh basil at the end.

              I had some ricotta leftover today and a brunch to attend tomorrow, so I made...

              Cannoli Cake with white chocolate bits
              Ricotta Loaf with white chocolate bits (and I had intended to include dried cherry bits, but somehow forgot to add them in...)
              Tomorrow morn I'm making an Ricotta Cream Custard Tart -- haven't decided whether I want to do an almond shortbread crust or a puff crust or a crust from some leftover pistachio cookies....
