Kashrut primer for kitchen help

Can anyone out there recommend a written guide or video for preparing food in a kosher kitchen that could be distributed to kitchen staff who know nothing yet about kashrut? For those of you in the catering world, what are the basic things I should cover with them?

    If it's for home, in addition to instructions, and whatever other lessons, I would really invest in those color coded utensils/clean-up things, that are blue/red/green meat, dairy, pareve to reinforce the concepts.
