Looking for really good cheese souffle or cheese/spinach souffle recipe

I love cheese and cheese+ spinach and I am looking for a souffle recipe that doesn't use breadcrumbs. Any favourite recipes out there?

julia has a good one. so goes alton. which is basically julia's with some cream of tartar for insurance.

Are you talking about breadcrumbs around the side of the souffle dish? Those are to help the souffle "climb". You could use grated Parmesan instead.

I've never used breadcrumbs. Souffles are basic, what will make a good cheese souffle, is good cheese.

Do you have favourite cheese types to use in a souffle?

It would depend on my mood. I love asiago, it's so flavorful, but a nice, sharp cheddar, or a swiss... really anything that has lots of flavor.
