I know I can make arancini with the left overs (as usual, I made enough for an army, and there are only two of us), but can I successfully freeze risotto???
I don't see why not, since risotto is a favorite component of frozen dinners (i.e. Michelina's, Lean Cuisine). You might lose some texture, but a good stir & some added fat when reheating would probably do the trick.
I like to reheat in the oven with some crushed ice on top. The ice melts amd keeps the rice soft.
