Ghirardelli Premium Classic White Baking Chips.....I just realized....
After all these years I just realized these aren't even white chocolate at all. I don't know what made me look at the ingredients but I happen to be baking with them right now and didn't see anything to do with chocolate in the ingredient list. The only mention of chocolate is under the ghirardelli name on the front of the package. I feel deceived! I guess I will have to look for white chocolate bars from now on and break them up.

There is no white chocolate that has "chocolate," or cocoa solids, in it. White chocolate contains cocoa butter.

Here's a CI guide to white chocolate brands that they used in testing. When you melt white chocolate, always go for the best discs you can, otherwise you'll wind up with a seized up block of blech.
