Salad to go with Cajun dinner?

Hi all - I'd love your help devising a salad/dressing to go with a rather spicy, heavy meal. I'm cooking for friends who have professed to never have eaten Cajun/Creole before (dubious, but ok); I'm making BBQ shrimp; chicken and andouille gumbo, blackened redfish over macque choux with a creole mustard sauce, and chicory coffee cafe-au-lait ice cream for dessert. I'd love to have some light, green salad with a tasty dressing to freshen up the spread, but I'm terribly uncreative when it comes to salads and their various dressings. Anyone have some ideas to throw at me?

    You can deep-fry well-dried cooked black-eyed peas and dust them with Cajun spices, and use them to garnish a salad of bitter greens with a slightly sweet citrusy vinaigrette.

      I agree with the idea that you want something acidic to cleanse the palate. Maybe a chicory and arugula salad with spiced pecans and a creole mustard vinaigrette would stay within your theme.

        Thanks so much for the suggestions- I'm thinking bitter greens with spiced pecans, a citrusy vinaigrette, and knobs of goat cheese will be perfect.

        A fennel-based salad with an orange/citrus vinaigrette might perk up the palette. Also I love a salad with roasted corn and goat cheese.
