Gougeres with alternative flours?

Looking for thoughts on trying a gougeres recipe with brown rice flour or perhaps a combination of brown rice flour and tapioca starch? Any thoughts?

Pão de Queijo uses tapioca flour so I'd think that would work. Those are great links from ghg, though!

Slightly off topic, but I have to share, it works so well - little browned bits of linguisa in those pao de queijo make fab linguisa rolls! Lovely little apps...

several of the bloggers who participated in the Gluten-Free Ratio Rally pâte à choux challenge came up with great stuff.
