I love skirt steak sliced for tacos, but also an Italian preparation: uccelli scappati - the skirt is cut into strips against the grain, they have a piece of cured ham (prosciutto) and a single sage leaf thinly pressed onto the strips... the strips are then rolled or folded (ham and sage on the inside), and skewered.
On the grill... Medium rare.
I was (pleasantly) shocked at the flavor combination, one of my favorite preparations of ANY steak!
