Tip for Making Ice Cream Sandwiches
Instead of scooping out softened ice cream to sandwich between cookies, my friend dazzled us with another technique.
He takes a pint of ice cream and slices it crosswise, through the cardboard and all, to divide the ice cream into disks.

The ice cream disks are positioned on the cookie bottom, then he loosens the cardboard with the knife and lifts it off.

Place the top cookie over, and you have an ice cream sandwich.
