Would like help with soups made with ground beef, pls
I haven't cared to make soups with ground beef, but I am now cooking for someone with a delicate stomach so hope to get some good ideas from kind cooks here.
Can't use things like beans, cabbage, spicy foods.
Protein has been a challenge; hence my thought of ground beef.

Maybe try a search for hamburger soup, or soup with meatballs. Egg drop soup comes to mind, it has protein but isn't too spicy.
Tofu could add protein and be included in almost any soup.
I have not tried it myself but my friend says Ina Garten's Italian wedding soup is good. I also like to add ground beef to my minestrone. My dad used to make a crazy soup called bachelors stew. Google it and got something entirely different so I will give you my closest rendition I have in my memories of watching him make it.
Saute one Med onion and one or two cloves of garlic depending on the size and your preference in olive oil. Add lean ground beef and brown well. Drain if needed. Sorry. I was scrolling on my tablet and it posted. To keep the sodium Lower I would use low sodium beef or chicken broth or stock. Add a few shakes to taste of Worcestershire at the end. This is a totally low tech recipe from my youth in the 70's. Hope it isn't to icky. I don't make it but it took me in the " way back machine" when you asked for ground beef soup. I hope this post finds you and you delicate stomach friend happy healthy and full.
If it has to be beef, stick with soups containing meatballs or meat-filled pasta (tortellini, etc). By itself, ground beef cooked in liquid turns into tough little pebbles. I think you would have more success with chicken or turkey. If you provide more information about the person's dietary parameters you might get better suggestions. Ulcer, GI tract surgery, GERD....?
Not a cheap way to go, but you COULD incorporate all-meat baby food in pureed soups if even texture is a goal.
The only soup I have ever seen with ground beef in it is a type of hobo stew the scouts used to make. They would add cooked ground beef to tomato soup. Sometimes they would add some veggies.
Wonton soup is ground meat in a dumpling.
My mother used to have a sensitive stomach. She ate a lot of baked potatoes.
Can your someone eat chicken? There are a lot more choices of soups with chicken. Even stocks are sometimes made with ground chicken.
You can live pretty well on soups and french bread.

My "patient" doesn't have a diagnosis. That's one of the challenges right now. I think her symptoms are worsening to the point that the doctor may soon realize she has a definite problem and then maybe we can get somewhere with a diagnosis and treatment.
She can eat chicken, but that gets old, and I can't get good chioken where I live, so I am not terribly motivated to use it.

We like what we simply refer to as "hamburger soup". Doesn't take a whole lot longer to make than heating a can of soup. It would obviously be better with fresh vegetables but it is good the way we do it.
Brown a pound or two of ground beef with some onion. When that is done dump in a can or two or diced tomatoes and a can or two of Veg-all. Add water or stock to suit. Simmer a few minutes and serve. Adjust the ratio of meat to vegetable however you like.
1 small onion diced
1 stalk celery chopped
1 carrot chopped
1 clove garlic minced
1/4 lb ground buffalo (you can use ground beef)
1 can black beans drained & rinsed
1/2 cup corn
1 1/2 cups chicken broth
1 small can diced tomatoes
Herbs like basil, thyme & oregano
Handful chopped parsley
S & P
Saute onion, carrot and celery in a little olive oil. When soft add garlic and saute 1 min. Add ground meat and cook until no longer pink. Add broth, tomatoes, black beans and seasoning. Simmer 15 min.. Puree half the soup and return to pan. Add corn and parsley. Heat and serve.
