Help! Appetizer and dessert pairings for single malt scotch tasting ???

Hello all:

I'm setting up a scotch tasting - probably including Laphroaig triple wood, Isle jura prophecy, and
black adder raw cask.

Can anyone help with several ideas as to appetizers to serve and a dessert or two? I gather that a dark chocolate dessert of some kind (flourless chocolate and/or mousse?) would work but not sure.

      When we do malt whisky tastings at the Virginia Distillery Co., we pair smoked salmon and/or blue cheese (often Berkshire Blue from Massachusetts), a hearty English-style cheddar with the Highlands or little baby lamb chops and a Manchego with quince paste for the fruitier Speyside. For dessert, anything caramel is great with many Highland whiskies, chocolate desserts with fruit work well with the Speysides; just use a less intense dark chocolate. I don't usually serve dessert with Islays and other peaty whiskies. It's just wrong. Having said that, chocolate with chili pepper has been well-received.

      To DavidT. Good recommendation. I sometimes even make peanut brittle with Highland. It's great.

        Thank you so much! My sense is that Laphroaig triple wood, Isle jura prophecy, and
        black adder raw cask are all "peaty" - so I will stay away from serving sweets except for some peanut brittle I guess. It's for a birthday but we can have cake before hand :)

          I have found a quality peanut brittle goes very well with single-malts, although I generally drink the Speyside malts rather than the smokey/peaty ones from the Wester Coast Isles.
