What to Do With Raw Lavender Honey
I was gifted a jar of raw lavender honey the other day. It tastes exactly like regular honey, except it is thick, opaque and spreadable. Besides having it on toast with peanut butter and mixing it into tea, what else can I do with it? Any ideas?

When I have had lavender honey in a taste test next to clover or other types, it wins by a long shot. It doesn't taste lavendar-y, it just has some great clean flavors, stronger than clover but not as overpowering as some of the darker honeys. Generally thats how honeys work, they will taste different, but not distinctly like the flower they feed on. Honeys that do have those strong flavors are usually blended after the fact.

Can you please explain what you mean by "raw". I've never seen that word attached to honey before. Honey is honey, surely?
Disappointing that you can't detect any additional flavour from the bees feeding predominently on the lavender - although when you can, it can be a bit of an acquired taste that I'm not a fan of. One of the traders at my local farmers market sells it, alongside his other products.

Any raw honey is a treat. A toasted bagel with cream cheese drizzled with honey is very delicious.
If your diet allows, honey cooked with pork is very tasty. Search for recipes that list herbes de Provence and honey in their ingredients list. That would be a step in the right direction. Then of course, enjoy your favorite cheese and some honey along with it also. -
