I don't have any spelt flour so.........?
My recipe asks for 1/4 cup spelt flour I want to replace it with all purpose or increase the mount of whole wheat asked for in this apple -zucchini bread recipe .So how much if any ???? this is the recipe http://www.cleaneatingmag.com/Recipes... Thanks
I'd just do a 1-1 replacement. In my experience quick breads like this are quite forgiving when it comes to the flour blend. Spelt isn't that different from wheat. I think that in this recipe, the use of spelt, as opposed to all whole wheat, is just window dressing, making it sound more exotic or special than it really is.
