Recommendations for my brand spanking new pressure cooker

I purchased a new Fagor pressure cooker. It's sitting at home waiting me to liberate it from its box. . .

Can anyone recommend a good, easy recipe for me to cut my teeth on this evening?

  1. Check the cookbook that comes with the cooker. There might actually be 2 booklets, with different recipes in English, Spanish, and French.

      While I sincerely do appreciate any and all replies, I wasn't asking where I should look for recipes.

      I was looking for something a bit more personal than a manufacturer's pamphlet.

        I meant it seriously. The manufacturer's recipes are a good starting; better I think than my idiosyncratic choices. There have been many threads about pressure cookers, many dealing with choice of brands. In the long run techniques are more important than recipes, including how to adapt other recipes. Also, you left things wide open as to ingredients and what sort of dish you want. Some come explicitly looking for bean dishes; others focus on stews and other long cooking meats.

          I agree with Paul -- the recipes in that pamphlet are written specifically to use with your cooker, and it's a good way to get used to the cooker with recipes that you're pretty darned sure are going to work.

          I made several recipes from the booklet when I bought my PC -- and thought it was a great way to learn the ropes while getting to try some new recipes.

            Thanks Paul, I didn't think you were cracking wise, just trying to re-iterate my initial question.

            Everyone's suggestions were very helpful, even though I got stuck at work last night and never even got the box open.

CZ, I think paulj did not mean any ill will with his comment; more to the point is that if you are new to the pressure cooker, using a recipe from the manufacturer - or at least a good long look through the booket that came with it - is advised since all pressure cookers are different, and you need to understand how your particular model works.

        I too have a Fagor, and I love it. Had it for 10 years, and just had to buy a new sealing ring this winter for it to keep the pressure up.

        I like a lamb stew, which can be nice and fresh for spring with perhaps some dill in it, and after you have released pressure, stir in a spoonful of creme fraiche and some 1" lengths of asparagus, and let those cook through. A nice one-pot meal. You do need to look in your Fagor booklet for how long such a dish should go.

        My Fagor book shows 2 cooking times - for med. pressure and high pressure. High one is of course faster, but I find for items like stews, it can really blow out the meats texture, so cook things like stew on the lower setting. Tomato sauce, veggie soup, cooking artichokes - things like that I do at high pressure setting.

        1. Lorna Sass, in an early chapter of her excellent book, Pressure Perfect, has the new owner of a cooker write down information for reference later. One piece of info is how little liquid you can use, and another is how full you can fill your cooker. A useful exercise is to bring plain water up to pressure, and learn how to release the pressure fast. I recommend you play with your cooker on its first night.

          The easiest thing I can think of is to make dried beans. It is possible that there is a recipe for beans in your manual. I'd try that first. It is hard for me to give you a recipe because different beans have different cooking times. Another easy thing is to make brown rice. For rice, you do not fill the cooker more than 1/2 full. the proportions are: 1 C br. rice to 4 C water. You also add 1 T of oil, and salt to taste. Begin timing after you have brought your cooker up to pressure; it takes 15 min. after the cooker comes up to pressure. Then you do a quick release.

          I hope this helps. Using a cooker becomes second nature, but you really do need to spend time learning about it up front.

And, among the related threads are topics where pressure cookbooks are recommended. Perhaps there are some good ideas for you in those threads.

            1. Try Jacques Pepin's Puerto Rican pork and beans. It's easy one pot meal that is cooked faster in a pressure cooker. The recipe is online if you search on google.
