Need ideas for rounding out menu with lamb shanks as main.

I'll be making Molly Stevens lamb shanks Provencal. I'd like to "mostly" keep with that region but it's not an absolute with me. I'll probably go with two sides.

Some side ideas:
lentils (not sure what presentation)
cauliflower gratin
braised fennel
root veg puree
some type of raw salad
green beans

I'm thinking of doing a simple starter of a tapenade and goat cheese crostini.

What do you think? I'm open to any and all ideas.

  1. I'd like roasted asparagus and potato/celeriac puree, myself.

    1. I like the sound of cauliflower gratin and green beans. Sounds amazing.

      1. White beans done with rosemary and garlic are kind of traditional. Do a crunchy fresh bread crumb topping and they're heavenly.
