What can I make with this? Lime, banana, coconut, white chocolate!

I also have three eggs. I am short on butter though.

I'm thinking some kind of cupcake. I don't have to use all of the ingredients, but I have three pounds of white chocolate, so I'd really like to use some of that!

    cookies would work too. Or a cake.

    Two pounds of the white chocolate chips are expired. Is this bad?

      Have you checked the smell and taste for rancidity? If all is well, you might be able to make a tasty pudding from it.

        Make a white chocolate genache with coconut. Pour a layer of it on the bottom of a graham cracker crust and let it harden.

        Mix 1/2 cup lime juice, 3 - 4 egg yolks, 1 can of sweetened condensed milk and some pureed banana. Pour into pie shell and bake at 350 F for 15 minutes. Let cool for 30 minutes then put in refrigerator for 2 hours.

        If you don't want to, you wouldn't have to do the banana puree.

            Um, I think those are usually called "blondies." For good reason. Just sayinzall.

            I'd do a pie...

            Coconut Lime Pie Crust - use favorite recipe but stir in some lime zest and sub coconut for some of the flour, and sub some almond meal in as well if you have it.

            White Chocolate Custard filling

            Roast and caramelize some bananas with some brown sugar and lime juice, and lay over custard.

            White Chocolate Island Pie.

              Melt some chocolate, puree it with coconut and banana, add some light cream or coconut milk and freeze. Pureed bananas will give you an ice-cream texture without using an ice cream maker.

                This recipe doesn't use bananas.. but it's good!
