Culinary Tours in Vietnam and/or Thailand

On the whole, I don't do group tours, to be sure. But several years ago I read about some food-centric visits to this part of the world, and now find myself in a position to do something like this. I am generally a fairly intrepid single traveler when it comes to parts of the world where they use the standard Western alphabet, but am more hesitant about this. I'm not saying I couldn't or even wouldn't put together something myself, but would be interested in looking at possibilities. Has anyone done anything like this, what company did you use, and was it a good experience?

    Never done a culinary tour, but I have found that a few good cooking courses to be useful. I have thought about the idea, and I feel it is an underserved market. Group tours are only good for meeting others of your same/similar ethnicity. I actually think it would be better to "hook up" up local tour guides to foreigners that would be happy to escort them to some good food (it might also be home/rural cooking). Sort of like food dating game. Local University students, foreigners - where the university students get a reasonable renumeration and feed reasonable food (500 baht / day would be sufficient).
