potato kugel egg split

I'm thinking of taking my basic potato kugel recipe

8 medium potatoes
2 onions
6 eggs
1/2 cup oil
4 Tbsp. all-purpose flour
1 heaping Tbsp. salt
1/2-1 tsp. pepper

shred the onions and potatoes
drain
add beaten eggs, oil, S + P, flour (matzoh meal)
bake
TA DA!!

I'm thinking of splitting the eggs. Beat the yolks with the other stuff and then folding in beaten egg whites.

What do you think?

  1. I think it would lighten it, which you might like. Personally I am all for the traditional texture of kugel

    1. My DH's grandmother and mother used to separate the eggs and fold in beaten egg whites in to their potato kugel, noodle kugel, and even potato pancakes. Guests thought that this was the secret to their delicious kugels. As you have guessed, it lightens the finished product.
