Easter menu without casseroles?
I -heart- casseroles. I really do.
But some of my family is dieting and I'd like to have some sides that won't break their calorie bank. I'm still making a honey baked ham and rolls, but am looking for some good sides that scream spring...
Would love some ideas!
A spinach and strawberry salad, with a lemon and balsamic viniagrette and toasted almonds
an asparagus souffle 'roll'; a souffle mixture baked in a jelly-roll pan, cooled, and filled with plain yogurt flavored with mint, lemon and dill. Roll up and slice for a light, pretty, filling side dish.
+3 on Roasted asparagus, dressed with orange and walnut oil is nice.
Pavlova for dessert, with fresh fruit, and a mix of whipped cream, lightned with greek yogurt and a little sugar for a topping. light and fresh...
