favorite side dish recipes for Passover

I am visiting NJ from Florida for the holidays.

What r some of your favorite side dish recipes for Pesach?
I usually make pickled beets, tzimmes,and cucumber salad.

  1. I like asparagus with hard boiled egg, signifying spring. Also sweet potato/ potato kugel with cumin,
    matzo kugel with mushrooms.

    1. I do a cauliflower leek kugel that I enjoy using of course cauliflower, leeks, garlic, vermouth, almond meal, eggs, parsley, thyme, and S&P. (shh, sometimes i make it when it's not passover too...)

        apple kugel
        apple sauce
        salad-lettuce tomato,cucumber, fresh herbs,avocado
        mashed potatoes/parsnip
        grated white turnip with oil/vinegar or grated carrots/raisins
        braised brussel sprouts
        chopped liver
