Help with Caramel Candy Making

I need help figuring out how to make my caramels more stiff and chewy. They tend to be on the softer side. Does too much butter make them soft? Ideally I would like them to have some chew.

  1. Cook your sugar to a higher temperature.

    1. what temp are you cooking til? are you using butter and cream, along with sugar/water? mine always set to firm but chewy, but don't know what your methodology is to really advise... (depending you can always add a little golden syrup or corn syrup too...)
