finally! the search for fresh eggs is over - you can find them at the above mentioned market. they're within 2 to 3 days of being laid.
it's easy to spot their freshness - the yolk sits in a thick coat of albumin and as eggs age, the white evens out to a single layer.
it is remarkable the difference fresh eggs make - this afternoons carbonara took on a silky feel and a golden hue that staler eggs simply can't achieve.
oh and the raw milk won't be there next saturday.

We get them down here, too, at a local street market every Thursday. The man who sells the eggs used to have extra large ones, but they never seem to appear lately. He also told me the eggs are kosher like the man with the chickens. And I don't think he was kidding. :-) In America, they fear us away from raw milk.. never even tasted it.

Fresh eggs are a joy. We have a seller at our local farmers market - eggs are organic and, usually, you get to pick which breed you want. I like the Speckledy - but, in truth, I think it might be more about the name than the eggs. She does a good range of organic spuds as well.
