What are some must-experience foodie activities to do in Spain?

I will be in Madrid for the month of May and I'm trying to find informative, if not hands-on, cooking/food activities, be it in Madrid or surrounding cities (or even beyond the surrounding cities).

So far the only item on my itinerary is an olive oil tour in Andalusa.

Any help would be appreciated!

(Also if anyone has recommendations for Bologna, Italy and surrounding cities as well, that would be helpful!)

You will get more response if you do a separate post on what you are looking for in Bologna/ Emila-Romagna on the Italy board. If you can be more specific as to your interests, ie, wine, cured meat production, etc, you'll get some appropriate recommendations. Also might do a search on that board as there have been recent posts on cheese making balsamic vinegar tours, cooking classes on that board.
