Ham - shank or butt

JohnnyT Mar 27, 2012 02:31 PM

Time to get my Easter ham. What's the difference between shank and butt hams?

The shank end is usually a little cheaper because it has a higher ratio of bone.

Paulj's right about the butt having a lot more meat. Unfortunately, it also has the aitch bone which makes it a pain to slice. I prefer the shank for ease of slicing. Alton Brown feels the same way.

The shank end is the end closest to the ankle. The butt end is closest to the shoulder. The butt end has more meat to bone than the shank end, although it isn't by much.

Strangely enough, my grocery store charges the same for butt or shank.
