I've posted on Montan Brewing Company and Q cusine in Billings. We ate at Poor Boy's in Casper and loved it. It is a genuinely local place with no attempt at updating other than a great microbrew selection. It has very good steaks and doesn't try to overcook when you order rare. Nothing memorable in Medora. In the Black Hills we stayed in Custer and ate at the Sage Creek, which was good (but the waiter moved right to food orders without asking about drinks which did not ft my priorities at the time) and the Buglin' Bull, which was above average bar food
