Need help with Sweet Easter bread made with yeast

I follow the recipe exactly but the crust is darker and not as soft as I would like. It does have a lot of sugar in it so I suspect this is why.. I make them in 8 inch round tin pans (the disposable ones) and bake them at 350 degrees for 30 minutes. I made a trial batch today and the inside is perfect - not dry or crumbly.
I need to make a lot more for Easter. . Any suggestions would be appreciated.

PS. What should I be putting brushing on top before I bake it - a whole egg? yolk with a little milk? I want it to be shiny.

  1. Beat an egg white with a little water (beat it with a fork) and paint that on the crust before you put the bread in the oven. To help minimize the browning of the crust, if you don't have a dutch oven, you can cover the loaf with a tent made of aluminum foil while it's baking.
    You can also try the egg white wash when the bread comes out of the oven and is still hot but that tends to weaken/soften the crust to some degree.
