Excellent cheeses discounted at Shaw's the Pru

I was just at the cheese section at Shaw's and there are manager's special stickers for $2 off a bunch of excellent cheeses, a couple of them already discounted. I picked up Morbier, Cazbozola, Rougette, Rouzaire. I was tempted by more but fortunately reason prevailed.

My other favorite secret at Shaw's, the discounted breads, had good stuff too: Nashoba Brook Pepper Jack, and Kalamata Olive with carmelized onions. Perfect toasted with cheeses.

    Keep in mind that those cheeses may have been there during the Back Bay blackout so use them soon.

        I hesitated before contributing. But you're both right, of course: we cannot enjoy delicious cheese without consistent, perfect refrigeration. How much better off we'd be if our forebears had realized this 1000 years ago. (but I thank you for not buying up my supply)

          Of course you're right that good cheese, well-tended doesn't need refrigeration. Think of the cheese wall at Formaggio.

          But that cheese wall is well-tended, cleaned daily and not shrink wrapped. Some how I can't see Shaw's unwrapping, cleaning, and rewrapping each piece of cheese after the power returned. (And, who knows, they may have had generators supporting the refrigerated cases for the entire time.)

          When I buy shrink wrapped cheese, I take it home, unwrap it and put it in a paper wrapper so it can breathe. Sometimes I even scrape it clean if the surface is showing signs of moisture damage from the wrapper.

          My issue would be more about shrink wrapped cheese that was possibly cold, warm, cold inside the wrapper. But, you can also give it your supply some TLC and extend its goodness.

          I'm with you on Shaws adding some good bread in recent years. It has become a regular stop for grabbing a decent loaf in the Back Bay when the Farmers Markets are not operating.

            Again, I agree with BZ.

            Soft cheeses (I think you might mean cambozola, btw) that have been sliced and shrinkwrapped and then left potentially unrefigerated for a day or 2 may not be at their best.

            There is always a reason for the "manager's special" ...
