Goose egg

dimsumgirl Mar 24, 2012 07:42 AM

A friend just gave me a fresh goose egg. Can anyone give me some ideas-- what do I do with it?

Goose eggs, like duck eggs, have firmer textured whites than chicken eggs and can turn rubbery when fried.

The best way to showcase a goose egg is to scramble them a la oeufs brouillés. A soft, custardy omelet in the French-style would be good as well.

If you had more than one, I would suggest ice cream, but alas ... you do not.

      Madeleines. They're amazing for pastry.

Really? why is that are they high in fat? I saw some recently at the santa monica farmers market and was wondering.

Larger yolk, higher yolk to white ration, richer taste.
