Gluten-free lunch suggestions wanted
I am preparing lunch for 12 of our employees for an off-site meeting. One of them is gluten-free (celiac disease, not just a dietary whim). I am looking for some suggestions for a nice, festive lunch that doesn't have to be heated. I thought of ceasar salad with salmon, that would be tasty but its been done to death. Any suggestions? I would prefer something naturally gluten free rather than some 'gluten-free' substitute. What about dessert?

I love Salmon Croquettes - I make mine with flaked salmon, cooked dice onion, egg, almond meal, salt, pepper, and fresh diced parsley. i leave em pretty wet and use only enough almond meal, such that they don't fall apart. i often make mini ones in molds and bake... i use them as toppers for salad or "croutons" to soup, etc.
Perhaps to serve with some frittata - great at room temperature and so variable.
and some Marinated, Cooked and Chilled portabello mushrooms
a side salad and some roasted green beans with lemon and slivered almondsDessert - Pavlova came to mind for me as well or...(White Chocolate) Panna Cotta or Macarons or Flourless Chocolate Cake or Flourless Peanut Butter cookies sandwiched with preserves

Love the two already posted. I'll thrown in glass noodle salad (mung bean noodles hold up, rice noodles do not) with your choice of fixings and dressed with nuoc cham — Andrea Nguyen has foolproof instructions on her site. And then maybe a fresh fruit and herb salad dressed with lime and coconut water and a dollop of coconut cream... I often have this for lunch and it's very satisfying without weighing you down.
