Madrid in sneakers -- where to dine well while informally dressed?

Spending next weekend in Madrid (4 full days, Fri-Mon) and trying to map out our meals. We're staying at the Westin Palace right in the center of Madrid and would like to stay in the Centro area. We're also "slumming" it -- no fancy dinner clothes are being packed for our short trip. We can pack slacks/dress shirts for a dinner, but 90% of the time we'll be in jeans, polo shirts, and sneakers. We are just as happy getting some charcuterie, cheese, and a bottle of wine and hanging out in the park as we are sitting in a restaurant.

Where can we eat (especially for dinner at a sit-down place) where we won't feel out of place?

This is what I have so far:
Breakfast: La Chocolateria San Gines/Chocolat in Huertas
Lunch: Mercado de San Miguel a couple times, otherwise open
Dinner: Tapas Friday and Saturday (Retiro area one night and Juana la Loca, Casa Lucas, El Tempranillo, Juana La Loca, Txirimiri the other) , Sunday and Monday open; potentially eating above the Mercado de San Anton?;

Casual paella place (La Barraca, others)?
Any recommended Asadors for lunch (Botin, Posada de la Villa, Aranduero)?
I like seafood but she doesn't... other options? Galician, Asturian?

We don't mind PAYING nice dinner prices, we're just not going to be able to LOOK it this time around.
