Need a dairyless, tofuless pot pie recipe

I was wondering if it is possible to make a dairy and soy free chicken pot pie. With the typical flavor you would get with a normal pot pie.

I agree with others - where's the dairy in the normal pot pie? The gravy part should use chicken stock not milk - or at least can. In culinary terms, make a veloute as opposed to a bechamel. And there are plenty of other fats that can be used in the crust and roux instead of butter, including the chicken fat.

      Crust use shortening or lard.

Filling - chicken, vegetables (carrots, onions, celery, diced potatoes, peas... etc), herbs and stock. As a thickener, you can use a little mashed potatoes.

Never had dairy in any of my pot pies.

No tofu, for that matter, either.

So the Joy of Kosher website has some dairy free pot pies, since mixing meat/chicken and dairy is not permissible for those who keep kosher. I attached the link below.

Aside from a roux, which works well with any fat, you can also use something like Mimiccreme, which is a nut-based (almond and cashew) "cream" substitute.

I didn't know there was dairy or soy in a pot pie.
Roast chicken, celery, onion, carrot, peas, in veloute (use vegetable oil intstead of butter for the roux) sauce. Crust (made with shortening).
Use thyme, sage, salt, and plenty of black pepper to season.
Seriously, no real need to substitute anything, unless you count vegetable oil oil/shortening as a substitute for butter, and some folks use it to begin with.

WIth the exception of butter in my short crust, I don't use dairy at all in my pot pie. - I use a little vegetable oil to make the roux to thicken the gravy. You could do a shortening-based crust. Would that work for you?

Same here. I dislike cream sauces so I make chicken gravy using a roux and there's no reason why you can't make that with vegetable oil or solid shortening. You could even use butter-flavored shortening in the crust. It's still dairy-free but will give you a little boost of flavor. If you don't want to make a pie crust, you could use frozen puff pastry. IIRC, the Pepperidge Farm is non-dairy.

Even better, use chicken fat from the drippings to make a gravy.
