Corned beef mishap
I'm planning on making corned beef from Tyler Florence's recipe making my own brine. I didn't really know what to buy so I bought a packaged O'Donnell's corned beef brisket which I think was probably already brined, but I'm not sure. It was in a shrink wrapped package with some liquid and a little seasoning packet. I started brining it in the fridge 4 days ago. Is it ok that it will be "double brined" so to speak? Is all hope lost? St Patrick's day is in 2 days and I'm a little worried now.
It's already "corned." I wouldn't brine it further. I would take it out of the brine. Tyler Florence's recipe calls for a brisket, a fresh cut of meat, not one that's already "corned."
Right, it's going to be far too salty. As soon as you can, remove it from the brine and let it soak in plain water for the next couple of days. You don't need to change the water periodically but you can if you want to. It will be fine by Saturday.
