St. Patrick's Day - two corned beef briskets in one dutch oven?

So, I'm having more people over than usual this year for St. Patrick's Day, so I've purchased two corned beef briskets. I've done a brisket in the Le Creuset enameled dutch oven several times before (both on stove and low oven heat) and it's come out wonderfully.

However - I only have one dutch oven, so I'm wondering if I can put both briskets in there! They are only about 3 lbs each, and can comfortably fit on top of one another. Since they will be covered in liquid anyway, does it really make a difference if there are two in there?

  1. You most certainly can cook two pieces of brisket in one vessel.....the only point of concern is if you are cooking the point and flat together.....the point takes longer time to get tender.

      I think these are two separate flat-cut briskets.
