Copper Bowl to whip meringue

Flexitarian Mar 14, 2012 11:50 AM

Does anyone know where I can get a copper bowl? Apparently they are better for whipping meringue in because of the ions in the copper.

Thanks. I was actually in WS yesterday but didn't notice it. But, I did notice that their prices are sky high for the exact same thing that other stores sell for much less. Does anyone else have them in Toronto?

Check out Tap Phuong in Chinatown. I haven't looked for copper bowls there but they seem to have everything and at reasonable prices.

Due to the scarcity of copper, few merchants are willing to pay the high prices required to keep a copper bowl in inventory. Go to a store you trust and ask them if they can order it for you.

if you don't want to pay williams sonoma prices your prolly SOL as far as buying one here. You may want to check online. Also The copper bowl thing was debunked by Harold McGee in the introduction of his new addition. Apparently Silver works just as well :) seriously though you won't notice much of a difference for the price. Especially if your using any kind of mixer.

I find anything copper quite over rated for the home cook. If you want to spend big dollars to whip meringue, go for a Kitchen Aid mixer- you can do fantastic meringue and so much more. Wish I'd bought mine years ago.

I know that we are a month and a half on with this post, but I was just looking at them myself and thought it was worth mentioning that on Craigslist, and in abundance on ebay, you can find well-made solid copper mixing bowls for whipping egg whites for well under $50. Seems like a lot of people buy them and never (or rarely) use them. Just pick up a little polish to go with your (not so used) bowl and you'll save a bundle.
