Question on my corned beef cooking right now

I have a corned beef (flat cut) in the crock pot right now. Not a big fan but hubby loves it so I give in once a year.

It was about 2.75 lbs and I trimmed a bunch of fat. It's in beef broth and various spices. Anyway I put it in about 6 hours ago but it is pretty tough right now. I've been cooking it on low the entire time. Is it overcooked or does it still need a few hours to cook away the tough? I don't use it very often and lack confidence on time vs temp.

    I agree with the other posts. It will be fine, just give it a couple of more hours, and AGREE that you shouldn't keep opening up the lid to check it! Try to resist the urge because that really cuts down on the heat/process. Happy St. Paddy's Day to all! Loveeeeeeeeee the Corned Beef and Cabbage tradition!

      I agree with Bada, give a couple more hours. I usually go 8-10 hours on low.

        In a crockpot, it's not likely to be overcooked yet. Give it another hour or two. It's done when a fork can be inserted with little effort.

        edit: don't go opening the crockpot often!
