If you were to buy 2 or 3 Rick Bayless cookbooks what would they be?
"Authentic Mexican: Regional Cooking from the Heart of Mexico" should be one of the for sure. Covers all the basics and is really well written.
I'll second Authentic Mexican. Not just a collection of recipes. Lot's of sidebars on various ingredients and basic sauces. The title is for real. This is not Frontera Grill cooking.
To Authentic Mexican I would add Truly Mexican. Ok, that isn't Bayless, but it covers the salsas, fresh and cooked, in greater detail and variety.
One Plate at a Time for sure...
