Dough that's been laying around for a week

I made pizza dough sometime last week and haven't had a chance to do anything with it until now (put it in a plastic bag and it's now a giant blob). I'm going to make pizza tonight but I made a really large amount of dough (I used close to seven-eight cups of flour) and am wondering if it's possible to make something sweet like a large cinnamon bun/cake with the leftover?

Or can a large round loaf be made like Balthazar's Pain de Seigle using this type of dough?

TIA!

Also, is it too late to freeze the dough at this point since it's been in my fridge for so long?

    I wouldn't suggest that you try to use it as a cinnamon dough but you can bake bread/bread sticks with it if you really want to, but it isn't optimum. You will want to bring it to room temperature and then shape it to get the maximum rise.

    Pizza dough can be frozen very easily in pizza size portions but Id add a little more flour, just to be sure that the yeast has food.

      I wound up making several pizzas and took close to four hours in baking time since I could only do one pizza at a time. :) I did make a small braided loaf of bread and it came out surprisingly well. I did not get a thick crackly crust though.
