Lobster and other fresh-frozen fish at Costco

I see that lobster in their Friday's display case has sodium bisulfate added to the wild caught lobster tails.

Is sodium bisulfate a term for 'wet' similar to 'wet scallops' when there is 'something' added to keep them from turning less than white?

    I believe your're correct.

I think with scallops it's sodium tripolyphosphate. Don't know if they are similar.
