Best Gluten Free- Vegan Yellow Cake Recipe
i'm not a huge fan of using gums... well, actually, that's an understatement, but i've done a yellow cake using xanthan gum. i have another recipe somewhere that i created that doesn't use it, and i'll look for it if you're interested. but for now...
i do a flour mix by parts/weights--
1 part tapioca starch
2.5 parts potato starch
2.5 parts brown rice flour
1.5 parts sorghum flour
mix 220-225 g of the flour mix with 1 1/2 tsp xanthan gum.
mix 85-90 g Earth Balance, 150 g of granulated sugar, 1/2 teaspoon salt, 1 1/2 tsp vanilla extract, 1 1/2 -2 tsp baking powder.
add in 1/3-1/2 cup soy yogurt, a little at a time.
add in flour mix, alternately with 1/2 cup soymilk.
pour into pan and bake at 350.
