Why did my gnocchi melt away when I boiled it?
I made potato gnocchi like I've done a million times. I put them on a sheet pan and froze them. Once they were frozen I put them all in a ziplock bag and stored them in the freezer.
A few days later I put up a pot of water to boil and put the gnocchi in. The result was one giant glob of gnocchi. They didn't hold their shape at all.
Anyone ever experience this? What happened?
The only time this happens to me is when I don't use enough flour (I don't use egg in mine) but if you've made them a million times before with the same recipe then it is strange.
Could the water have come to a full roiling boil by accident when you were cooking? Sometimes that will cause them to break apart . . . .
