Filling for masala dosa?

I bought a pint of dosa batter at a local Indian market and am entirely too excited about dosas for breakfast tomorrow. Anyone have a recipe or suggestion for the potato filling in a masala dosa?

    There are many takes on it but a simple search will turn up 100's of recipes.
    Personally I boil potatoes in their jackets and set aside.
    While they are cooking pop some Black Mustard seeds in a good bit of oil add Green chilis slivered, toor dal, a pinch or two of tumeric cook until dal get toasted.
    Add sliced onions cook until soft but not colored.
    Add peeled and coarsely chopped potato and stir to combine.
    Heat thru.

      Thanks - this is exactly what I was looking for. Boiling the potatoes intact seems to make a big difference in taste and texture vs. Cooking diced potatoes. My dosa-making technique needs a lot of work, but the flavors were great. Thanks again.

        sure, they get water logged if you peel first unless you steam them.
