Napa Restaurant Help

Hi,
My husband and I, along with another couple, will be in the Napa region for 5 nights in August. I know it's far away and most places won't take reservations, but I am starting to think about where we want to go for dinners and lunches. To give you some background: the 4 of us are from NYC and are in our late 20s. We are very into the food scene here, and our favorite dining experiences / meals have been Per Se, Eleven Madison Park, Babbo, and ABC Kitchen in NY and Alinea in Chicago. We'd like to have a balance of meals in Napa ranging from multi-course/chef's tasking (like French Laundry type) to more casual, farm-to-table type restaurants. We are staying at Calistoga Ranch, so that will be our base. Advice about where to go for our 5 dinners, and for some lunches, is greatly appreciated!

Usual suspects to get you started:
Redd (currently probably the board favorite)
    French Laundry
    Meadowood
    Ad Hoc
    Bottega
    Restaurant at Solage
    Morimoto's
