Las Vegas - Best Fish and Osso Buco

I've reviewed the Southwestern board but would like to get a few real west coast Chowhound rec's on the best places in Las Vegas for fresh fish and see if anyone's run across an outstanding Osso Buco? I'm familiar with places such as Acqua, Aureole, Emeril's, etc, but wonder if there might be some jewels located off the Strip?

I love Rosemary's - well off the Strip. Don't know if they have osso bucco, but excellent fish & other dishes. Very talented chef.
