RAW food. quality control?

Since there's a topic about vegetables and fruits.
It makes me wonder how do RAW food places like crudessence manage their produces. Do they grow most of their food or do they buy from fruits and vegetables distributors.

    I assume they do it like any other restaurants with the extra that they want bio produces, and maybe get their stuff from smaller distributors.

      they support urban agriculture and purchase from off-island farmers

        Yep, they work with Lufa (among others probably) and in the summer they also have a rooftop garden at the Palais des congrès.
