Where can I find a smooth tart pan??
I have been looking for a smooth edge tart pan, not the scalloped type which is commonly for tart .. also with a removable bottom in different sizes from like mini tart probably 2" to 8" or 9"
I have seen some pastry shop have tarts with the smooth tart shell look but i have a feeling that they use 1" height pastry/cake ring which I don't want because I can't store them properly sitting one top of the other with the pastry dough at the bottom with no support when moving them.
Do you know any places around here?
You may be out of luck as everywhere I have worked has used the cake ring. but there are a few options in TO my faves are McCalls and Madame Gateux (both easily subway accessible. Also I was at Tap Phong and saw really shallow springform pans that you could try to use. I some itmes use, depending on the crust, 1 inch deep cake pans. If you can allow it to cool then you can usually get them out pretty easily, this works well with shortbread like crusts.
