a meal truly "from the heart"

Friday night I experienced one of the best dinners I've ever eaten. Since this board is all about home cooking, I'm sure all of you will appreciate it.

I went down to to Brenham, TX to work & show cutting horses Thursday. The young man, Jorge, who is from Honduras, works for my trainer friend.

After the show on Friday, Jorge surprised me with a dinner of beans, rice, two fried eggs and corn tortillas. I gotta tell you, everything was cooked to perfection and his prayer before dinner really brought me to tears....half was in Spanish, half in English, but he was so thankful for this meal and just thankful for having food. He then offered me everything in his refrigerator.....leche, huevos,....This young man was so kind.

In appreciation, I've already made a pot of soup that will be frozen in indivual servings, and chili will be on the menu tomorrow. I'll head back there on Wednesday.

Rice, Beans, Eggs, how much simpler can it get.....?

    When I was about 13, my father managed a metal coating plant. Most of the men who worked there were Mexican (after fighting the owner, my father finally got one of them promoted to assistant manager) and did not have large incomes. Anyway, some of their wives brought lunch freshly cooked and I happened to be there one lunch time. I was hanging out with the guys and one of them offered me part of his lunch...they were wonderful potato enchiladas and he shared them with me. I asked my father why there was no meat in the enchiladas and he said pay day was just three days away so they couldn't afford meat....yet he shared his lunch with me. That was 50 years ago and as you can read I've never forgotten it.
