Oktoberfest - need pork shank recipe - Schweinshaxe

Just outside the Hofbrau tent in Munich is a Schweinshaxe "hut" with the best rotisserie grilled pork shanks. Does anyone have a recipe for these? Places to find them (raw) would also be appreciated although the ones at www.germandeli.com look about right. I'd love to cook these at home.
