Anybody have any menu suggestions for us please

We are planning an outdoor service at our church in Iowa for May, 2012. We plan to have a Bless the Animals portion, will have Sunday school awards and confirmation awards, involve the choirs, etc. We have done burgers & hot dogs and fresh fried walleye the last 2 years for meat and both worked well. Any suggestions on food for this? We usually do not do pot luck - our committee provides the food and prepares it (with much help from some dedicated folks obviously). I'm just coming up blank this year. Thanks in advance

I know that a lot of groups around here have giant pancake feeds- you could have all the bacon and sausage already cooked and in warming trays, and rent a giant griddle (people here hire the Waffle Man!) for the pancakes.
But there's something about a good old fashioned BBQ to kick off Summer :)
