What to do with pineapple???

Well, I miscalculated and purchased a beautiful whole pineapple and thought I would have it finished off before I travel away from home tomorrow. Thing is, I haven't even cut into it.
SO...
What can I do with pineapple???
And I'm not into pineapple upside down cakes, just so as you know...

Throw some of those cubes in tequila--a bar near me sells slices of "tequilafied" pineapple. It's potent! Safe travels. :)

Just stir-fry it with shrimp, pork, ham cubes etc.

But if you're traveling tomorrow, stick it in the freezer and do the stir-fry after you come home.

grill it and then layer it with pound cake, vanilla pudding and whip cream in a trifle bowl..sublime!

Marinate slices or long pieces in a mixture of melted butter, honey, soy sauce and sriracha and grill. I love this with grilled steaks or pork chops in particular.

Make a salsa and put it over pork or fish. Tastes great over anything teryaki.

Cut it up into bite size pieces. Eat what you want. Put the left overs into a zip lock bag and freeze it. You can use the frozen pieces in smoothies if nothing else.
